"Market price" may be listed on a restaurant menu in lieu of a dollar value when an expensive item, typically seafood, fluctuates with market conditions. People don't normally ask before ordering because this makes the patron look cheap or poor, so this conspicuous consumption can be used as a sign of wealth. It's the food equivalent of "bling".
